Essential training for all food handlers. Gain the Royal Environmental Health Institute of Scotland (REHIS) Elementary and Intermediate Food Hygiene Certificates, showing that you have taken steps to be as informed as possible. Remember – an outbreak of food poisoning is defined as 2 or more affected people.

Who is it for?

All food handlers, including bar and waiting staff, need food hygiene training. Under the Food Safety (Scotland) Regulations 2006, all food businesses must operate hygienically and all food handlers must be supervised and/or trained in food hygiene. This includes all food, whether opened or packaged, as well as drinks and ice!

How would a food hygiene qualification help me?

In the event of an outbreak of food poisoning, the only defence available to you is ‘due diligence’. The easiest way of proving this is for all staff to be trained in food hygiene.

REHIS Elementary Food Hygiene Course
Course format

This 1 day course which runs from 9am to 5pm, concludes with a multiple choice exam, covering the following topics:

  • Bacteriology
  • Food poisoning
  • Food borne infections
  • Prevention of contamination
  • Personal hygiene
  • Premises pest control
  • The law

REHIS Intermediate Food Hygiene Course
Course format

The Intermediate course is designed for those at the supervisory level in the hospitality or retail industry who already have a good basic knowledge of food hygiene.

The 3 day course is assessed with a 2˝hr 20 question examination which tests the participants awareness & understanding of the topics covered.

  • Introduction to Food Hygiene
  • Bacteriology, Bacterial Food Poisoning , Food Borne Infections
  • Non - Bacterial Food Poisoning
  • Food Contamination and its Prevention
  • Personal Hygiene, Food Preservation
  • Design, Construction and Maintenance of Food Premises, Equipment and Utensils
  • Cleaning and Disinfection, Pest Control, Hazard Analysis
  • Legislation

A REHIS Food Hygiene Certificate is awarded to participants who successfully complete the courses.
REHIS (Royal Environmental Health Institute of Scotland) are the official governing body dealing with all food safety matters.
