    We are introducing a block of 5-day intensive Plant-Based Cookery & Nutrition Courses, these can be taken as stand alone or bolted together to make up our full 6 week Foundation in Nutrition and Plant Based-Cookery course.  If you are already following a plant based diet but are looking to increase your knowledge and gain confidence in the kitchen, this is the perfect opportunity to help you on your journey.

    We will teach you the fundamentals of plant-based cookery and nutrition, as well as a good understanding of working in a kitchen, hygiene measures and organisation.  The course will give you the confidence to understand your ingredients and adapt recipes in the future.

    Participants will create a vast range of dishes from healthy raw canapés packed full of essential nutrients, to fermented foods that promote gut health and the occasional indulgent dessert that could easily be found in a French patisserie.

    Suitable for participants following a Vegan diet, no animal products are used.

    5 Day Patisserie Course

    Our 5-day intensive, hands-on patisserie course is a new addition to our calendar. During lockdown many home cooks have been honing their home baking skills and this course will cover the fundamental skills required to create a vast array of French patisserie items and mainstay classics.

    You will be tutored by our Head Chef, Ashley Macmillan, who has been shortlisted for Patisserie Chef of the Year in the delayed 2020 CIS Excellence Awards. 

    You will learn Viennoiserie pastries, tempering chocolate, layered entremet creations, Petit Fours, dough, pastry & tarts.  Finishing to a professional standard that wouldn't look out of place in a Parisienne Patisserie.

    We will guide you through presentation and decoration to elevate your dishes to the next level.

    5 Day Butchery Course

    In this 5-day intensive course, you will learn from a master butcher as they demonstrate and explain primal and subprimal cuts in butchery. Aimed at the advanced home-cook, it is very much a hands on experience. Participants will put into practice the processes and techniques of butchery from a selection of different meats before learning a variety of transferrable skills in their preparation and cookery.

    We will cover a wide range of topics including:

    2 Day Patisserie Course

    On this two day course you will cover making Viennoise dough and create pain au chocolats, croissants. Then you will try entremets, the French term for a fancy dessert that has many different layers of cake and pastry creams, created in a mold and served cold and Petit Fours.
