    5 Day Butchery Course

    In this 5-day intensive course, you will learn from a master butcher as they demonstrate and explain primal and subprimal cuts in butchery. Aimed at the advanced home-cook, it is very much a hands on experience. Participants will put into practice the processes and techniques of butchery from a selection of different meats before learning a variety of transferrable skills in their preparation and cookery.

    We will cover a wide range of topics including:

    • Fundamental butchery skills
    • Knife skills
    • Explanation of the various joints and cuts
    • How to select meat 
    • Working with whole carcasses
    • Hand-tying techniques

    Lunch and refreshments will be provided each day and all course creations can be taken home, along with recipes and technical notes.
