    Patisserie Weekend

    Our Patisserie Weekend is a hands-on patisserie course aimed at the home cook enthusiast. Over the weekend, you will learn an assortment of dishes ranging from Viennoiserie pastries, chocolate work, layered entremet creations, to Petit Fours. Finishing to a professional standard that wouldn't look out of place in a Parisienne Patisserie.

    We will guide you through presentation and decoration to elevate your dishes to the next level.

    Lunch and refreshments will be provided each day and course creations can be taken home, along with recipes and technical notes.

    Bread Weekend

    Our bread weekend is the perfect opportunity for novice or experienced home bakers to join us for a hands-on, two day experience covering a variety of home bakes.  During the course we will give you knowledge and confidence to progress with your baking at home and the ability to adapt recipes taking in other flavours or shapes.  

    We will guide you through the whole baking process, covering flavour, texture, shape and rise from every bread we make. 

    An example of breads covered on this course are:

    Sourdough loaf

    Sourdough seeded rye

    Baguettes

    Pretzels

    Milk bread swirl buns

    Gluten free loaf

     

    All equipment and ingredients are included, along with lunch both days. 

    You will receive a printed recipe booklet and a PDF copy will be sent on completion.

    You just need to bring your own enthusiasm and containers to take home your wonderful creations!

    5 Day Patisserie Course

    Our 5-day intensive, hands-on patisserie course is a new addition to our calendar. During lockdown many home cooks have been honing their home baking skills and this course will cover the fundamental skills required to create a vast array of French patisserie items and mainstay classics.

    You will be tutored by our Head Chef, Ashley Macmillan, who has been shortlisted for Patisserie Chef of the Year in the delayed 2020 CIS Excellence Awards.

    In this 5-day intensive course, you will learn from a master butcher as they demonstrate and explain primal and subprimal cuts in butchery. Aimed at the advanced home-cook, it is very much a hands on experience. Participants will put into practice the processes and techniques of butchery from a selection of different meats before learning a variety of transferrable skills in their preparation and cookery.

    Our 5-day Fish & Shellfish course is the ultimate seafood experience! 

    Aimed at those who share a love for seafood, we shall primarily focus on preparation (cleaning, scaling, filleting), this course will cover sensational dishes for all dining aspects as well as stocks and sauces.

    We use the freshest, sustainably sourced fish wherever possible.

    Also included, is a seafood nutrition workshop to give you the tools you need to make informed decisions when incorporating seafood into your diet.

    Preparing for University

    This five day intensive cookery course is aimed at school leavers and undergraduates who are about to leave home and cook for themselves for the first time.  Each day is full of hands-on, practical cookery.

    We have designed the course to give kitchen confidence and develop students culinary skills and knowledge.  We will teach the basic food hygiene and safety in the kitchen and seasonality of ingredients.  

    The dishes covered will be healthy and affordable, so easily recreated on a student budget!  We will also cover dishes that can be cooked in larger quantities and frozen.  We will also give pointers for rescuing dishes, storing food safely and portion control.
     
    All dishes will be eaten throughout the course, with any leftovers able to be taken home!
