In this 3-day intensive course, you will learn from our Head Tutor, Ash Macmillan, as he demonstrates and explains primal and sub primal cuts in butchery.
This is very much a hands-on experience. Participants will put into practice the processes and techniques of butchery from a selection of different meats before learning a variety of transferrable skills in their preparation and cookery.
We will cover a wide range of topics including:
– Fundamental butchery skills
– Knife skills
– Explanation of the various joints and cuts
– How to select meat
– Working with whole carcasses
– Hand-tying techniques
Monday to Wednesday from 10am -4pm
What is included:
o All equipment and ingredients required to prepare each days dishes
o An ESFW apron to wear each day
o Expert tuition from our experienced and friendly chef tutors and assistants
o A printed recipe/technical notebook booklet detailing the techniques/processes covered, a PDF copy is also sent on completion of the course.
