Join us on our 5-day fish and shellfish course, covering a range of dishes and techniques to allow you to select, prepare and cook a fabulous array of fish and seafood dishes!

Our 5-day Fish & Shellfish course is the ultimate seafood experience!

Aimed at those who share a love for seafood, we shall primarily focus on preparation (cleaning, scaling, filleting), this course will cover sensational dishes for all dining aspects as well as stocks and sauces.
We use the freshest, sustainably sourced fish wherever possible.

Also included, is a seafood nutrition workshop to give you the tools you need to make informed decisions when incorporating seafood into your diet.
Lunch and refreshments will be provided each day, along with recipes and technical notes.

Skills Covered:
– How to select the freshest seafood
– Knife skills
– Pin boning
– Prepare, fillet & cook flat fish
– Prepare, fillet & cook round fish
– Molluscs
– Crustaceans
– Cephalopods
– Fish stock
– Sauces

Course Summary:
Monday to Friday from 10am -4pm

What is included:
o All equipment and ingredients required to prepare each days dishes
o An ESFW apron to wear each day
o Expert tuition from our experienced and friendly chef tutors and assistants
o A printed recipe booklet detailing the dishes covered, a PDF copy is also sent on completion of the course.
o Refreshments throughout each day
