Our hugely popular 5-day patisserie course is aimed at the intermediate baker, covering an array of doughs, desserts and pastries to really boost your patisserie repertoire and elevate your dishes! This course is also a great stepping stone for those who are thinking of a change in career but not yet ready to commit to the 6 or 12 week professional course.

During lockdown many home cooks have been honing their home baking skills and this course will cover the fundamental skills required to create a vast array of French patisserie items and mainstay classics.

You will be tutored by our Head Chef, Ashley Macmillan, who has been shortlisted for Patisserie Chef of the Year in the delayed 2020 CIS Excellence Awards.

You will learn Viennoiserie pastries, tempering chocolate, layered entremet creations, Petit Fours, dough, pastry & tarts.¬† Finishing to a professional standard¬†that wouldn’t look out of place in a Parisienne Patisserie.

We will guide you through presentation and decoration to elevate your dishes to the next level.

Lunch and refreshments will be provided each day and all course creations can be taken home, along with recipes and technical notes.
