Game in gastronomy is the meat from a wild bird or animal. Game is usually classified into one of three categories:
1) Winged game, such as pheasant, grouse, partridge etc
2) Ground game, such as rabbit, hare, etc
3) Big game, such as deer
Studies have shown that wild game is better for you, it is lower in fat and higher in protein than other farmed meats. All of the game used in our Game cookery class comes from local game suppliers, we guarantee that the meat has full traceability, has been properly treated and is of the best quality. During your cookery day we will guide you through everything from preparation to plating that will help you understand and appreciate the produce and how to work with flavours that are very unique.
The class runs from 10am – 4pm, our tutor will demo the dishes and you will recreate in a fun, social environment. You eat the dishes you make and any additional food can be taken home. To help us be more environmentally friendly, please bring reusable containers with you on the day.
What is included:
o All equipment and ingredients required to prepare the days menu.
o An ESFW apron to wear on the day
o Expert tuition from our experienced and friendly chef tutors and assistants
o A full day of hands-on cookery
o A printed recipe booklet detailing the dishes covered
o Refreshments throughout the day and a glass of wine with lunch
Please note meat is an integral part of this class and we therefore cannot accommodate those following a vegetarian or vegan diet.
